Cucumber salad – a classic recipe

Ingredients

  • Yogurt – 2200ml. or 770g. of Strained Yoghurt
  • Pickles – 650g.
  • Garlic – 4 cloves
  • Salt – 2 tea spoons 
  • Oil –  80 ml.
  • Walnuts – 80g. 
  • Fresh Dill – a handful

 

Instructions

Strain the yogurt (if you are using normal yogurt). Add finely chopped dill, oil, salt-crushed garlic, and ground walnuts, and mix well.

TARATOR – (Таратор)

Cold cucumber soup – a classic recipe

Ingredients

  • 2 cucumbers (about 500g)
  • 500g Bulgarian yogurt
  • 400 ml of water
  • 3-4 garlic cloves
  • (Optional) 2-3 tablespoons of crushed walnuts
  • A bunch of dills
  • 2-3 tablespoons of sunflower oil
  • Salt to taste

Instructions

  1. Beat the yogurt with a fork until it becomes liquid. Pour it into a bowl and add the water. Mix it well.
  2. Cut the cucumbers into cubes and put them in a separate bowl.
  3. To the bowl with the cucumber add the garlic, walnuts (optional), dill, oil, and as much salt as you like. Then mix everything well.
  4. Lastly, pour the yogurt you mixed with water into the bowl with the cucumbers and stir well. Add salt if needed.
  5. Serve cold.
